Recipe: Carrot Cake

Finally I got all the recipes from Peiling (Thanks!!!!!)
Well this is NOT the carrot cake that you normally see in the hawker centres, its a western styled carrot cake. It really has Carrots! NOT fried with eggs and tong cai etc etc
Ingredients:
Dry:
1 ¼ cups sugar
1 ½ cups flour
2 tsp cinnamon
¾ tsp baking powder
½ tsp baking soda
¼ tsp salt
Wet:
¾ cup oil
3 eggs
2 cups shredded carrots
Methods:
- Preheat oven to 3500F.
- Lightly grease and flour a 7” x 11” pan.
- Make a well in a large bowl with dry ingredients.
- Add wet ingredients.
- Mix together until well combined and pour into prepared pan.
- Bake in oven for 45-50 minutes until spongy on top.
- Cool, slice and serve.
