Recipe: Carrot Cake

Finally I got all the recipes from Peiling (Thanks!!!!!)

Well this is NOT the carrot cake that you normally see in the hawker centres, its a western styled carrot cake. It really has Carrots! NOT fried with eggs and tong cai etc etc

Ingredients:

Dry:

1 ¼ cups sugar

1 ½ cups flour

2 tsp cinnamon

¾ tsp baking powder

½ tsp baking soda

¼ tsp salt

Wet:

¾ cup oil

3 eggs

2 cups shredded carrots

Methods:

  1. Preheat oven to 3500F.
  2. Lightly grease and flour a 7” x 11” pan.
  3. Make a well in a large bowl with dry ingredients.
  4. Add wet ingredients.
  5. Mix together until well combined and pour into prepared pan.
  6. Bake in oven for 45-50 minutes until spongy on top.
  7. Cool, slice and serve.
